Here’s a quick and easy avocado toast recipe to try:

- Total Time: 10 minutes

Ingredients
2 slices whole-grain bread
1 avocado, sliced or mashed
2 egg, poached or over-easy
Cherry tomatoes
1 tbsp olive oil
1 tsp lemon juice
Salt and pepper (to taste)
Recommended add-ins for more flavor and nutrients:
4 slices bacon
Hot sauce (drizzle on top for added flavor)
Instructions
- Lightly toast bread.
- Heat non-stick skillet on medium heat. Spray pan with olive oil and crack eggs into skillet. Cook until whites are completely set, but yolk is soft to touch.
- Spread 2-3 tbsp of avocado onto toast. Top with egg and cherry tomatoes. (add bacon if desired).
- Drizzle with olive oil and lemon juice.
- Salt and pepper to taste.
