Avocado Toast with Egg & Tomato


  • 1 ripe avocado
  • 2 large eggs
  • 2 slices of whole-grain bread
  • 1 medium-sized tomato, thinly sliced
  • Salt and pepper to taste
  • Optional toppings: crushed red pepper flakes, chopped fresh herbs (such as cilantro or parsley), sriracha sauce


  1. Start by toasting the slices of whole-grain bread to your desired level of crispiness.
  2. While the bread is toasting, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth, and season with salt and pepper to taste.
  3. In a separate pan, fry or poach the eggs to your preferred doneness.
