Instructions
- Start by toasting the slices of whole-grain bread to your desired level of crispiness.
- While the bread is toasting, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth, and season with salt and pepper to taste.
- In a separate pan, fry or poach the eggs to your preferred doneness.
- Once the bread is toasted, spread a generous layer of mashed avocado onto each slice.
- Top the avocado with sliced tomatoes, dividing them evenly between the two slices.
- Carefully place a cooked egg on each slice of toast.
- Season the eggs with an additional sprinkle of salt and pepper, if desired.
