Turkey Zucchini Meatballs Recipe

  • 1 pound ground turkey
  • 1 cup grated zucchini, (squeeze excess moisture out)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • ½ tablespoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • Olive oil (for greasing baking sheet)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Grease a baking sheet with olive oil or line it with parchment paper.
  2. Combine Ingredients: In a large mixing bowl, combine ground turkey, grated zucchini, breadcrumbs, Parmesan cheese, Italian seasoning, onion powder, sea salt, pepper, and beaten egg. Mix well until all ingredients are evenly combined.
  3. Shape Meatballs: Using your hands, shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake: Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and golden brown on the outside.
  5. Serve: Once cooked, serve the turkey zucchini meatballs on a platter and garnish with additional chopped parsley or grated Parmesan if desired.
