- 1 pound ground turkey
- 1 cup grated zucchini, (squeeze excess moisture out)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- ½ tablespoon Italian seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- Olive oil (for greasing baking sheet)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Grease a baking sheet with olive oil or line it with parchment paper.
- Combine Ingredients: In a large mixing bowl, combine ground turkey, grated zucchini, breadcrumbs, Parmesan cheese, Italian seasoning, onion powder, sea salt, pepper, and beaten egg. Mix well until all ingredients are evenly combined.
- Shape Meatballs: Using your hands, shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
- Bake: Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and golden brown on the outside.
- Serve: Once cooked, serve the turkey zucchini meatballs on a platter and garnish with additional chopped parsley or grated Parmesan if desired.
