(Health Secrets) Tired of potato salad and cole slaw at your cookouts? Here’s a fabulous quinoa and beet salad recipe that turns up the flavor quotient. And because quinoa is one of the few vegetarian foods providing complete protein, this dish can stand alone as a super nutritious lunch. Another feature is that it contains no highly perishable ingredients like mayonnaise, so you can leave it out in the heat for awhile without worry.
Ingredients for quinoa and beet salad (use organic ingredients whenever possible):
3 medium to large beets – cooked and cubed
1 cup quinoa, rinsed and cooked
Feta cheese
Black Calamata olives
Chopped green onions
Mandarin oranges
Salad greens
3 tbs. olive oil
2 tbs. cooking Sherry
Sea salt
Garlic powder
Cayenne
Black pepper
Instructions:
Toss together beets, quinoa, Sherry, oil, salt, black pepper, cayenne, and garlic powder. The quinoa will turn pink from contact with the beets.
Spoon the mixture over greens and sprinkle with crumbled feta cheese. Garnish with chopped green onions and mandarin oranges.
