Do you like southern style creamed corn or have favorite recipes which call for it, but want to make certain that the corn you use is not genetically modified and has no other unhealthy ingredients? If so, worry no more and make your own southern styled creamed corn with this recipe which calls for organic corn. For an even sweeter dish, choose white corn or go 50/50 white and yellow corn.
8 ears of certified organic non-gmo corn (yellow, white or a combination)
2 Tbsp coconut sugar
1 Tbsp organic all-purpose unbleached flour (coconut flour or other gluten-free flour would be ideal)
1 cup heavy cream (preferably organic)
1/2 cup cold water
2 Tbsp bacon grease from nitrate-free bacon
1 Tbsp butter (preferably organic)
Sea salt to taste
Freshly ground black pepper to taste
In a large bowl, cut the tip off the cobs. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.
Whisk together sugar and flour, and add salt and pepper to taste. Combine with corn. Add the heavy cream and cold water. Mix.
In a large skillet over medium heat, heat the bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy (about 30 minutes)
Add the butter right before serving.
