Avocado Toast

If you haven’t tried avocado toast or it isn’t already part of your weekly breakfast routine, we’re here to convince you otherwise. Not only are avocados high in healthy fats (which keep you feeling fuller longer), they are incredibly nutritious, too.

Avocados contain 20 different vitamins and minerals, have more potassium than bananas, are loaded with fiber and powerful antioxidants, and can help lower cholesterol and triglyceride levels. Some studies even show that avocados can help you better absorb nutrients from other plant foods – making it a breakfast superfood you’ve gotta eat!

Tasty sandwich with poached egg and avocado

Avocado Toast


  • Total Time: 10 minutes
  • Yield: 1 piece of toast 1x

Ingredients

Scale

2 slices whole-grain bread
1 avocado, sliced or mashed
2 egg, poached or over-easy
Cherry tomatoes
1 tbsp olive oil
1 tsp lemon juice
Salt and pepper (to taste)

Recommended add-ins for more flavor and nutrients:

4 slices bacon
Hot sauce (drizzle on top for added flavor)


Instructions

  1. Lightly toast bread.
  2. Heat non-stick skillet on medium heat. Spray pan with olive oil and crack eggs into skillet. Cook until whites are completely set, but yolk is soft to touch.
  3. Spread 2-3 tbsp of avocado onto toast. Top with egg and cherry tomatoes. (add bacon if desired).
  4. Drizzle with olive oil and lemon juice.
  5. Salt and pepper to taste.
